Dear Emilia, a new dining establishment in Denver, captures the essence of Italy’s Emilia-Romagna region through its unique architectural design and culinary offerings. Created by the Michelin-recognized team behind Restaurant Olivia, this 3,700-square-foot restaurant is not just a place to eat but an immersive experience that highlights the rich cultural heritage of northern Italy. The design, conceived by REGULAR Architecture, is inspired by a single photograph taken in Bologna, showcasing the city’s iconic portico-lined streets. This image serves as the foundation for the restaurant's architectural language, allowing the food and wine to take center stage while subtly evoking the spirit of Italy. Upon entering Dear Emilia, guests are greeted by a striking traditional batteria featuring barrels of San Giacomo’s renowned balsamico, which serves as a central architectural element. This installation, referred to as "black gold," connects diners to one of Emilia-Romagna's most cherished culinary traditions. The restaurant's interior is crafted with a thoughtful selection of materials, including lime-washed plaster, muted stone, and warm timber, all sourced from local artisans. This refined yet understated design creates an inviting atmosphere that encourages guests to savor their dining experience. The layout of Dear Emilia is designed to enhance the dining journey, with a sequence of arches guiding patrons through the space. A fully open kitchen allows diners to witness the culinary process, while a six-seat chef’s counter offers an intimate view of the kitchen in action. With seating for 88 guests, a 10-seat patio, and a private dining room for 22, every aspect of the restaurant is meticulously curated.
